This Hippie Dip Tomato Gazpacho is a refreshing, vibrant no-cook recipe that blends ripe tomatoes, cucumbers, and sweet red peppers with hemp hearts for a creamy texture. Enhanced with balsamic vinegar and olive oil, and optional spices like smoked paprika and chili flakes, this chilled soup is perfect for a light, healthy meal or appetizer. Serve it over toasted sourdough or with goat cheese for extra indulgence.

Ingredients

Vegetables

  • 4 cups ripe red tomatoes, chopped
  • 2 cups cucumbers, peeled and chopped (about 1 large cucumber)
  • 2 cups sweet red peppers, deseeded and chopped (about 2 medium peppers)

Liquids & Oils

  • 2 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil

Others

  • 1/4 cup hemp hearts
  • 1/4 tsp salt, plus more to taste
  • 1/4 tsp cracked black pepper
  • Optional: 1/4 tsp smoked paprika
  • Optional: handful fresh basil
  • Optional: pinch hot chili flakes

Instructions

  1. Prepare Ingredients: Chop the tomatoes, peel and chop the cucumbers, and deseed and chop the sweet red peppers. Gather all other ingredients for easy blending.
  2. Combine in Blender: In a standing blender or food processor, add the tomatoes, cucumbers, peppers, hemp hearts, balsamic vinegar, extra virgin olive oil, salt, cracked black pepper, and any optional spices like smoked paprika, fresh basil, and chili flakes.
  3. Blend Smoothly: Blend on high for 2-3 minutes, scraping down the sides as needed, until the gazpacho is super smooth. The consistency should be creamy without needing water.
  4. Adjust Texture and Seasoning: If you prefer a thinner texture, add up to 1/2 cup of water gradually. Taste and adjust salt and seasonings as desired.
  5. Serve or Chill: Serve the gazpacho immediately for a fresh, vibrant flavor, or refrigerate for a few hours to let flavors meld and deepen. Serve chilled, optionally topped with more hemp hearts or sliced tomatoes.
  6. Optional Serving Suggestions: This gazpacho can be served over toasted sourdough bread (gluten-free if preferred). Add crumbled goat cheese or grilled halloumi for a more indulgent dish.

Notes

  • Chilling the gazpacho for a few hours enhances and deepens its flavors.
  • Add optional spices like smoked paprika or chili flakes to customize the heat and smokiness.
  • Serve over toasted sourdough bread for a delightful soaking effect; gluten-free bread works well.
  • Adding goat cheese or grilled halloumi gives an extra layer of richness.
  • No cooking required; perfect for a quick, healthy meal or appetizer.
