A refreshing and tangy Creamy Cucumber Salad featuring crisp cucumbers and a zesty lemon yogurt dressing. Perfect as a light side dish to Middle Eastern, Greek, Indian, or rich meat-based meals, this salad combines fresh ingredients with a creamy, flavorful dressing for a deliciously healthy addition to your menu.

Ingredients

Salad

  • 3 standard cucumbers (or 2 long Telegraph/English cucumbers)
  • 1/2 red onion, finely sliced
  • 1/4 cup mint leaves, finely chopped (or 2 tsp dried mint)

Creamy Lemon Yogurt Dressing

  • 1 cup full fat yogurt (Greek or plain)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Prepare the Dressing: In a bowl, combine the full fat yogurt, extra virgin olive oil, lemon juice, minced garlic, salt, and pepper. Mix well and let it sit for 20 minutes to allow the flavors to develop fully.
  2. Slice the Cucumbers: Cut the cucumbers in half lengthwise, then slice them into thin 3mm (1/8 inch) thick slices. This ensures crisp, bite-sized pieces perfect for the salad.
  3. Combine Salad Ingredients: In a salad bowl, add the sliced cucumbers, finely sliced red onion, and chopped mint leaves. Pour the creamy lemon yogurt dressing over the mixture.
  4. Toss and Serve: Gently toss all ingredients together until the cucumbers and onions are evenly coated with the dressing. Serve immediately for the freshest flavor.

Notes

  • Cucumber Type: Use either 2 long Telegraph/English cucumbers or 3 medium standard cucumbers (known as Lebanese cucumbers in Australia). Both types work well for this salad.
