Ingredients

Butter (for greasing and topping)

  • Butter, for greasing
  • 2 tbsp butter, diced (optional, for topping)

Cream Cheese Filling

  • 250 g (8 oz) cream cheese, at room temperature
  • 1/3 cup white sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 2 tbsp lemon juice

Egg Mixture

  • 4 eggs
  • 3/4 cup + 2 tbsp milk (low fat or full fat)
  • 3 tbsp white sugar
  • Pinch of salt

French Toast Bake

  • 12 fresh slices sandwich bread, crusts removed (adjust quantity for loaf size)
  • 2 tbsp brown sugar (optional, for topping)

Macerated Strawberries (Optional)

  • 1 punnet strawberries, sliced
  • 1 tbsp sugar

Instructions

  1. Preheat Oven and Prepare Loaf Tin: Preheat your oven to 180°C (350°F). Generously butter a 10cm x 21cm (4″ x 8″) loaf tin to prevent sticking and to add richness to the crust.
  2. Make Cream Cheese Filling: In a mixing bowl, beat or mix the cream cheese, white sugar, and vanilla extract together until combined. Add the egg and lemon juice, then continue beating or mixing until the mixture is smooth, light, and fluffy.
  3. Whisk Egg Mixture: In a large bowl, whisk together the eggs, milk, sugar, and a pinch of salt until fully blended. This will be used to soak the bread slices.
  4. Dip Bread Slices: Quickly dip two slices of fresh sandwich bread into the egg mixture. Since the bread is fresh, it will soak the mixture quickly without becoming soggy.
  5. Layer Bread in Loaf Tin: Line the base of the loaf tin with the egg-soaked bread slices. Trim the bread if needed to fill any gaps. Repeat this process two more times to form three layers of soaked bread.
  6. Add Cream Cheese Filling: Spread the entire cream cheese mixture evenly over the layered bread in the loaf tin, creating a creamy center.
  7. Top with More Bread: Add two more layers of egg-dipped bread slices over the cream cheese filling, making a total of five bread layers in the loaf tin.
  8. Add Butter and Sugar Topping: Dot the surface with diced butter and sprinkle with brown sugar. This step is optional and creates a sweet and crunchy crust.
  9. Bake: Bake the loaf in the preheated oven for 40 minutes or until golden and puffed. Check at 30 minutes; if the top is already a dark golden color, loosely cover the loaf with foil to prevent burning and continue baking until done.
  10. Rest Loaf: Remove the loaf from the oven and allow it to rest in the tin for 15 minutes. Then carefully turn it out onto a cooling rack and let it rest for an additional 5 minutes before slicing.
  11. Prepare Macerated Strawberries (Optional): Combine sliced strawberries and sugar in a bowl and let the mixture sit for at least 20 minutes to allow the strawberries to release their juices and become sweetened.
  12. Serve: Serve slices of the creamy French toast loaf topped with the macerated strawberries for a fruity finish. Enjoy warm!

Notes

  • The number of bread slices may need adjusting depending on the size of your bread. You want enough slices to create five layers in your loaf tin; trim bread as necessary to fit.
  • Fresh bread is essential for this recipe because it soaks up the egg mixture quickly, unlike stale bread which is typically used in French toast recipes.
  • The butter and brown sugar topping is optional. It adds a crunchy, sweet crust and buttery flavor but increasing calories and richness.
  • Strawberries are optional and primarily add flavor and decoration. The French toast loaf is delicious on its own.
  • Nutrition information includes the optional macerated strawberries and is based on 8 servings.
